At just 23, Cayle Lutas might be the youngest bar manager on the Gold Coast. But don’t be fooled by his age – Bin 72’s Chief Cocktail Officer knows a thing or two about brewing up the perfect beverage. All you have to do is ask.

When did you start pouring drinks?
I worked at Peppers Salt Resort in Kingscliff for five years before coming over to head up the bar when Bin 72 opened in November 2014. Before that I was in school!
What specialties do you serve up at Bin 72?
We have a pretty amazing Spicy Margarita on the menu, and one of our most popular drinks at the moment is called the Purple People Eater – a Caprioska made with a blueberry sugar syrup and cucumber-infused gin. As well as our extensive list of cocktails, I always have one or two specials on the go.
What are some tricks of the trade to making the perfect cocktail?
It’s important to think about who you’re making it for. When you know it’s for a woman it can be sweet with a touch of prettiness. For a man, something classic.
Favourite flavour combination at the moment?
A lot of cocktails are going back to the classics, with a modern twist. One I am loving here at the moment is a twist on an Old Fashioned – made with Kraken Spiced Rum and ginger wine.
Coffee or cocktail to end the night?
I’d go for one of each. Or an Espresso Martini which is the best of both worlds. We’ve been making a Salted Caramel Espresso Martini lately which is pretty awesome – it’s not on the menu, but ask and you shall receive…
